Detox diet, day 8. So much to say about it, but no time to do so. For now, I will leave you with a recipe for this delicious salad I have eaten every day for the last 8 days, and I still look forward to it every time. Its bright, flavorful, healthy and takes about 3 minutes to make! Add some chicken or shrimp to make it a complete dinner.
Heirloom Tomato, Cucumber and Avocado Salad with Lemon Vinaigrette
Just chop up some spinach or romaine lettuce, heirloom or grape tomatoes, cucumbers, and half of an avocado and toss with your lemon vinaigrette dressing.
Lemon Vinaigrette
- Juice of 3 lemons
- Olive oil to equal the amount of lemon juice
- 1.5 T dijon mustard
- 2 cloves garlic- minced
- salt to taste
Put in a jar and shake till its emulsified and completely combined. I like my vinaigrette with a punch, but if you don’t like it with quite such a zing, do 1 part juice to 2 parts oil. This will keep in the fridge for at least a week, but I usually have finished mine way before then.
