Fourth of July Popsicles

I was inspired to make these beauties after discovering how easy popsicles are to make when I made strawberry popsicles last week. I was looking for a frozen yogurt recipe, and this fourth of july popsicle came to mind.  I’ve seen some cool multi-colored ones on Pinterest, like the rainbow ones found here. It looked too complicated to me, but it’s actually a lot simpler than I thought!

Fourth of July Popsicles

First, get some 3oz. dixie cups. This recipe made 6 for me.  It depends on how full you want to make them.

Blend 1 pint fresh strawberries in a blender with 1T of lemon juice. You can add sugar or honey.  I chose not to to make this a healthy snack for all of us. Add to each dixie cup and freeze for 30 minutes.

Mix greek yogurt with a fork to loosen it up.  Add 1T honey if you wish to sweeten it. Add to each dixie cup. Insert popsicles stick in each cup and freeze for another 30 minutes.

Blend 1 pint blueberries and 1T lemon juice.  Add to dixie cups.

Freeze overnight.

Peel off dixie cups and wow your guests with these festive, healthy and really tasty popsicles!
