Herbed Veggie Dip and a Colored Snack For The Kids

My kids adore veggies.  I mean, they beg for them at every meal.  I have to keep them locked up, or it is all they will eat.

Can anyone say sarcasm?  You would think I was trying to feed them poop when I offer any type of vegetable.  Immediate revulsion and a lot of screaming just to see a vegetable on their plate.

My latest scheme is to do color themed snack time.  Today was orange.

I make sure there are things they love, and things I want them to love on the plate.

Somehow, it makes carrots look much more exciting to them.

Side note… I have a confession to make… I might have lied to my children at one point (please don’t tell!).  I might have told them that if they eat carrots it will help them see REALLY far.  I might also have pretended to see about a mile away after eating several carrots.  And they just might have believed me.  And maybe, just maybe, they both actually ate a carrot afterwards…

I also hear tell that a lot of kids will eat veggies if they have a dip for it that they like. My kids unfortunately are not of this persuasion.  But this is a dip for those that are.

Herbed Veggie Dip

  • 8 oz sour cream
  • 3 Tablespoons milk
  • juice of 1 lemon
  • chopped fresh herbs (I used Dill and Parsley, Thyme is also a nice one with lemon)

Mix together and serve.  Lasts about a week covered in the fridge.
