Chicken Curry Salad- the healthy (and delicious!) version

This is one of my go to dishes.  It is easy, quick, healthy, flavorful, and I usually have the ingredients on hand.  What more can you ask for?

Curry is a general name for a mix of spices (generally from South Asia) and so the flavors can vary widely from brand to brand.  I have three curries in my spice cabinet.  One that is spicy and bursting with flavor, ones that’s really mild for lighter dishes and when people don’t do spicy, and one that is from Sri Lanka (because I spent a summer there in college, and it brings back memories for me).

Chicken Curry Salad

  • 1 lb. chicken cooked and chopped (if you have leftovers- even better!)
  • 1/3 cup plain yogurt
  • 3 oz. chutney- this you can find in small jars in the indian or condiment section.  Major Grey’s is a good brand.  I like mango chutney the best, gives it a nice twist.
  • 1-2 T. curry powder- depending on how spicy you like it
  • Salt and Pepper to taste

Mix all ingredients and serve.  I like it in pita bread, or wrapped in butter lettuce for a carb free version.

If you’ve made it spicy, as I always do, it goes well with lemonade.  The sweetness and acidity cut down on the burning in your mouth, and tastes amazing!
